Week 70: Orange Ricotta Cake

Ricotta is a popular ingredient in Italian baking. It’s featured in many cakes and pastries because it allows the desserts to stay moist.

This cake is the perfect treat for any summertime occasion. Plus, this is a one-bowl recipe that solely requires ingredients you have in your pantry.

I recommend serving this cake with a dusting of powdered sugar or whipped cream. It also tastes great on its own!

If you’re not a fan of orange, you can substitute the orange for lemon. Both options will taste amazing!

RECIPE:


INGREDIENTS:

  • 3/4 cups unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 3 eggs

  • 15 oz. part-skim ricotta cheese

  • 1/3 cup orange juice

  • Zest of one large orange

  • 1 1/2 cups all-purpose flour

  • Powdered sugar, optional

STEPS:

  1. Preheat your oven to 350°F, and line a cake pan with parchment paper.

  2. In the bowl of a stand mixer, cream the butter and sugar together until light and fluffy. Then, add the eggs, ricotta, orange juice, and orange zest.

  3. Once combined, add the baking soda and flour and continue mixing for 2-3 more minutes.

  4. Pour the batter into your prepared pan and bake for 50 minutes. After the cake has cooled, dust with powdered sugar, if desired.
