Week 75: Reese's Pieces Cake

This cake tastes unbelievably good. Picture decadent vanilla cake layered with a creamy peanut butter frosting and topped with Reese’s Pieces.

I’m not a fan of peanut butter or Reese’s Pieces, but I put my differences aside because as I took my first bite of this cake, I was converted.

It’s also easy to make, if you break the steps down. The recipe definitely looks a little intimidating, but all the extra steps make it worth it in the end.

I can’t wait to make this for a birthday party, special gathering, or even Halloween. Not only is it a showstopper, but it also tastes just as good.

RECIPE:


INGREDIENTS:

Cake:

  • 1/2 cup unsalted butter, softened

  • 1 1/4 cups of granulated sugar

  • 4 eggs

  • 2 teaspoons vanilla extract

  • 2 cups cake flour, divided

  • 1 cup whole milk

Frosting:

  • 1 cup unsalted butter, softened

  • 1 1/4 cups powdered sugar

  • 1/4 cup cocoa powder

  • 1/2 cup melted chocolate wafers

  • 1/4 cup creamy peanut butter

  • 1/2 cup Reese’s Pieces, chopped

STEPS:

  1. Preheat your oven to 350 degrees F, and line two 8-inch cake pans with parchment paper.

  2. In the bowl of a stand mixer, cream the butter and granulated sugar. Add the eggs and vanilla extract and continue mixing for 3 minutes. Add 1 cup of the flour, then the milk, and then the remaining flour. Pour the batter into your prepared pan and bake for 30 minutes. Set aside to cool to room temperature.

  3. While the cake is cooling, make the frosting. With an electric mixer, beat the butter and powdered sugar until light and fluffy. Add the cocoa powder, melted chocolate, and heavy whipping cream.

  4. Pipe a ring of chocolate frosting around the edges of your base cake layer. Fill it in with the peanut butter and top with crushed Reese’s Pieces. Top with the other cake layer and frost the exterior of the cake. Decorate, as desired.
