Can you believe this cake has technically no flour added to the batter? That’s right; it’s made out of filo pastry.
This cake is called portokalopita and is essentially a delicious and flavorful orange cake.
The taste reminds me of a gulab jamun (an Indian treat) or week 5’s orange, almond, and rose cake.
I think that portokalopita is best served warm with a scoop of vanilla ice cream or Greek yogurt.
RECIPE:
INGREDIENTS:
Cake:
1/2 box phyllo pastry dough
1/2 cup granulated sugar
1 cup Greek yogurt
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup orange juice
1 cup vegetable oil
Zest from 3 oranges
Syrup:
1/2 cup orange juice
1 cup granulated sugar
1 cup water
STEPS:
Preheat your oven to 200 degrees F and line two baking sheets with parchment paper. Additionally, grease a 9-inch cake pan with butter.
Distribute the sheets of phyllo dough between the two baking sheets and bake for 20 minutes until crispy. Then, crush the phyllo pastry into smaller flakes using your hands.
Mix the crushed phyllo and the rest of the cake ingredients. Pour the batter into the cake pan and bake for 1 hour.
While the cake is baking, go ahead and start making the syrup. Over medium-high heat, boil the sugar, orange juice, water, and cinnamon stick together for 10 minutes.
Once ready, poke the top of the cake with a fork. Pour the orange syrup filling over the cake and serve.
