Week 87: Rawa Tutti Frutti Cake

Today I baked a rawa Tutti Frutti cake with my grandmother in India. It was a fun experience and an opportunity to try a new recipe!

Rawa is also known as semolina flour. So, not only does the cake not contain any gluten, but it also doesn’t contain eggs.

This cake is very easy to make and is perfect for a sweet breakfast or afternoon snack. It tastes great when served with tea.

You can omit the Tutti Frutti, but if you can find it in an Indian grocery store, I recommend adding it. The Tutti Frutti adds a burst of flavor.
RECIPE:
INGREDIENTS:
1 cup rawa, or semolina
1/2 cup powdered sugar
1/4 cup yogurt
1/2 cup vegetable oil
3/4 cup milk
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cardamom
1/3 cup Tutti Frutti
STEPS:
Preheat your oven to 350 degrees F, and line a 6-inch cake pan with parchment paper.
In a bowl, mix the rawa, sugar, yogurt, oil, and half of the milk. Let the mixture sit for 15 minutes.
Then, add the rest of the milk, baking powder, baking soda, ground cardamom, and Tutti Frutti. Pour the batter into your prepared pan and bake for 30 minutes or until golden brown.
Cool to room temperature and then serve.
