Week 40: Bánh Chuối Nướng (Vietnamese Banana Cake)

Bánh Chuối Nướng is a Vietnamese banana cake or banana pudding, and it is probably the most unique cake I have ever made during this challenge.

I was scrolling through social media when I saw this interesting-looking cake. I immediately knew I had to bake it for the blog!

This cake is made out of pieces of brioche mashed together with coconut milk to form a thick paste.

It tastes like bread pudding mixed with caramelized bananas. When served warm, this cake is what dreams are made of.
RECIPE:
INGREDIENTS:
4 bananas, peeled
300 grams of brioche bread, cut into small pieces
1 can of coconut milk
1/2 cup condensed milk
1/4 cup all-purpose flour
STEPS:
Preheat your oven to 375 degrees F, and line the base of an 8-inch cake pan with parchment paper. Grease the sides with butter.
Fill a wide bowl with water and salt. Add the bananas and let them soak for 30-45 minutes.
Once soaked, cut each banana into 2 cm slices.
In a large bowl, allow the coconut milk to soak into the brioche pieces for a few minutes. Then, with a spoon, mix the bread and coconut together until they form a paste. Add the condensed milk, flour, and banana slices. Stir gently to avoid mashing the bananas.
Pour the batter into your prepared pan and bake for 1 hour.
