Week 59: Lemon Gooey Butter Cake

Gooey butter cake is a classic St. Louis dessert that I am obsessed with making.

It's usually made with a vanilla cake base with a topping that shares a pudding-like consistency.

However, since it's summer, I wanted to make a lemon gooey butter cake to celebrate the warm weather.

Think of this recipe like it's an elevated lemon bar. It's perfect for snacking on the go, but is still so decadent.
RECIPE:
INGREDIENTS:
Cake:
1/2 cup butter, melted
1/2 cup granulated sugar
1 egg
3 tablespoons lemon zest
1 tablespoon lemon juice
1 1/2 cups all-purpose flour
1 teaspoon baking powder
Topping:
4 oz. cream cheese, room temperature
2 cups powdered sugar
2 tablespoons lemon zest
1 egg
STEPS:
Preheat your oven to 350 degrees F, and line an 8-inch cake pan with parchment paper.
In a large bowl, mix all of the cake base's ingredients together.
In a separate bowl, mash the cream cheese, powdered sugar, egg, lemon zest, and lemon juice until a paste is formed.
In your prepared pan, pour in the cake batter. Then, spread the topping over the cake's base. Bake for 30 minutes.
